Fast, Fancy, Fabulous Fish Dinner

I tried to make up for a decadent, totally-not-lo-co (and absolutely fantastic) dinner at Jean Georges in NYC this Friday with a 4 mile walk around the perimeter of Central Park Saturday morning.

But in my heart, I knew that wasn’t enough.  After a weekend eating out in NYC for every meal, I decided it’d be a good idea to cook some healthy dinners this week.

My husband was shocked.  Pleased, but shocked.

Delightfully Easy and Delicious – Salmon Asparagus Orzo “Salad”

With my eating habits in the doldrums, I needed inspiration…and found it in the March issue of Cooking Light.  After spending a half-hour paging then surfing, I stumbled upon this recipe – then headed right to the store.  Turns out, it was so good that my son actually ASKED to try some!
