Ina’s Baked Cod with Garlic & Herb Ritz Crumbs

First, an apology for my absence. November and December were crazy—had a gall bladder attack which resulted in surgery and then a virus (not Covid) masqueraded as a surgical complication… It’s been a crazy past two months with a LOT of medical testing. But the good news is things are finally sorted, so I am back to writing.

If you’ve never had a gall bladder attack (and I hope you don’t) here’s one irony: it’s very important to eat a LOW FAT diet. And if you blog about cholesterol and already do that, well, then it’s a waiting game until surgery.

While waiting, I went on the lookout for some new low-fat dinner options. And Ina Garten delivered (as she does!) with her Baked Cod with Garlic & Herb Ritz Crumbs dish. Big shout out to Grace Elkus of TheKitchn, which is how I discovered this recipe. And to our friends Chris and Dave who joined us for the test dinner, and were kind enough to shop for and bring over a few key ingredients.

Now Ina’s recipe does have Ritz crackers and 3 TB of butter for 4 people, so it’s not an amazingly low-fat recipe. BUT with just 7 grams of saturated fat per serving, it’s a reasonably healthy choice versus many other proteins (note, though, that the sodium content is very high in this dish).

This is a great weeknight dish—it’s easy, delicious, and pretty enough for company.

As the recipe on Ina’s Barefoot Contessa website does not include nutritional information, I calculated (estimated!) it using MyFitnessPal.
